Orange-glazed Shredded Carrots (reduced Or Low-fat)

Ingredients

- 1/2 cup fresh squeezed orange juice
- 1/2 cup fat free chicken broth
- 1 teaspoon honey (if you like your sides on the sweeter side) (optional)
- 1 teaspoon cornstarch
- 2 teaspoons extra virgin olive oil
- 1 1/2 lbs carrots, julienned or 2 (10 ounce) bags shredded carrots or 2 (10 ounce) bags julienne-cut carrots
- 1 teaspoon butter
- 1/4 teaspoon salt
Recipe
- 1 whisk orange juice, broth, honey (if using) and cornstarch in a small bowl.
- 2 heat oil in a large nonstick skillet over medium-high heat. add carrots and cook, stirring constantly, until slightly softened, about 3 minutes.
- 3 stir the juice mixture and add to the carrots . cover and continue cooking, stirring occasionally for 2-3 minutes. add butter and continue to cook until the butter melts and the carrots are tender, 2-3 minutes. (note the if you are usng shredded carrots, your cooking time will be shorter.).
- 4 serve.
