Knock Off Fried ( Baked ) Chicken

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3 egg whites
  • 1 teaspoon worcestershire sauce
  • 1 pinch pepper
  • 1 cup whole wheat flour
  • 1/2 cup oat bran
  • 1/4 cup wheat germ
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon ground cloves
  • 1 pinch pepper
  • 2 skinless chicken breasts
  • 2 skinless chicken thighs
  • 2 skinless chicken drumsticks
  • 1 can defatted chicken broth, save any extra,using only enough to coat baking dish

Recipe

  • 1 heat oven to 400 degrees.
  • 2 in a large bowl whisk egg whites, worcestershire sauce and a pinch of pepper, set aside.
  • 3 in another bowl combine the crunch coating ingredients.
  • 4 roll the chicken pieces in the egg mixture then in the crunch coating, coating well pour enough of the chicken broth to coat the bottom of a 9 x 13 baking dish place chicken in dish, cover with waxed paper.
  • 5 bake for 10 minutes.
  • 6 remove the wax paper.
  • 7 return to oven and bake until golden brown, 10- 15 minutes more- add more broth if too dry on bottom of pan serve with favourite sauce.
