Japanese Chicken Wings

Ingredients

  • Servings: 6
  • 3 pounds chicken wings
  • 1 egg, lightly beaten
  • 1 cup all-purpose flour for coating
  • 1 cup butter
  • sauce
  • 3 tablespoons soy sauce
  • 3 tablespoons water
  • 1 cup white sugar
  • 1/2 cup white vinegar
  • 1/2 teaspoon garlic powder, or to taste
  • 1 teaspoon salt

Recipe

  • preheat oven to 350 degrees f (175 degrees c).
  • cut wings in half, dip in egg and coat with flour.

New Year Black Eyed Peas

Ingredients

  • 1 pound dry black-eyed peas
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 2 (32 ounce) cartons chicken broth
  • 8 cups water
  • 1 pound smoked ham hocks
  • 1 (14.5 ounce) can diced tomatoes
  • 5 pepperoncini peppers
  • 1 bay leaf
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground thyme
  • salt and pepper to taste

  • place the black-eyed peas into a large container and cover with several inches of cool water; let stand 8 hours to overnight. drain and rinse before using.
  • in a large stock pot over medium heat, cook and stir onion and garlic in olive oil until onion becomes translucent, about 5 minutes. pour in the chicken broth and 8 cups water, bring to a boil, and reduce heat to a simmer. stir in soaked black-eyed peas, ham hocks, tomatoes, pepperoncini, bay leaf, garlic powder, thyme, and salt and pepper. cover and simmer until peas are tender, ham meat is falling off the bones, and the broth is thickened, about 3 hours.

  • 1/2 teaspoon paprika
  • salt and pepper to taste
  • 1 pound skinless, boneless chicken breast halves - cut into thin strips
  • 1/4 cup vegetable oil
  • 4 ounces fresh mushrooms, sliced
  • 1/4 cup lemon juice
  • 3/4 cup chicken stock
  • 1/2 teaspoon garlic powder
  • 1 (14 ounce) can artichoke hearts, drained and quartered

Roast Sticky Chicken-rotisserie Style

Ingredients

  • Servings: 2
  • 4 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 onions, quartered
  • 2 (4 pound) whole chickens

Recipe

    Preparation Time: 10 mins Cook Time: 5 hrs

    Ready Time: 9 hrs 10 mins

  • in a small bowl, mix together salt, paprika, onion powder, thyme, pepper, black pepper, cayenne pepper, and garlic powder. remove and discard giblets from chicken. rinse chicken cavity, and pat dry with paper towel. rub each chicken inside and out with spice mixture. place 1 onion into the cavity of each chicken. place chickens in a resealable bag or double wrap with plastic wrap. refrigerate overnight, or at least 4 to 6 hours.
  • preheat oven to 250 degrees f (120 degrees c).
  • place chickens in a roasting pan. bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees f (85 degrees c). let the chickens stand for 10 minutes before carving.

Oma's Fabulous Matzo Ball Soup

Ingredients

  • 2 (10 ounce) packages matzo crackers
  • 1/2 cup butter
  • 6 eggs
  • salt and pepper to taste
  • 3 tablespoons minced fresh parsley
  • 2 onions, minced
  • 5 ounces matzo meal
  • 96 ounces chicken broth

    Preparation Time: 30 mins Cook Time: 25 mins Ready Time: 55 mins

  • bring a large pot of lightly salted water to a boil.
  • break matzo crackers into small pieces, and place in a large bowl. add water to cover; allow to soak for a few minutes, until soft. drain off excess water.
  • melt butter in a large skillet over medium heat and stir in drained matzos; stir until mixture is dry and slightly brown. remove from heat, and mix in eggs, salt and pepper to taste, parsley, and onions.
  • mix in just enough matzo meal to make mixture hold together. roll one golf ball-size matzo ball. place matzo ball in the boiling water to test the mixture. the ball must rise to the top of the water and not break apart. if it does not rise, then too much matzo meal was added. in this case, add another beaten egg to the mixture and try again. when desired consistency is reached, roll all of mixture into golf ball size spheres.
  • in a large saucepan, bring chicken broth to a slow boil over medium heat; add balls to broth. serve soup as the balls rise to the top of the broth.

  • 1/4 cup cornstarch
  • 1 3/4 cups water, divided
  • 3/4 cup sugar
  • 1/2 cup distilled vinegar
  • 2 drops orange food color
  • 8 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 2 1/4 cups self-rising flour
  • 2 tablespoons vegetable oil
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 egg
  • 1 1/2 cups water
  • 1 quart vegetable oil for frying
  • 2 green bell pepper, cut into 1 inch pieces

  • in a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring. heat to boiling. turn off heat. combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. continue stirring until mixture thickens.

  • when ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. pour hot sweet and sour sauce over top.

  • 4 skinless, boneless chicken breast halves
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 3/4 pound yellow squash, sliced
  • 3/4 pound zucchinis, sliced
  • 1 medium tomato - peeled, seeded and chopped

  • in a large nonstick skillet, melt butter in the oil over medium high heat. season chicken with half of the salt and half of the pepper, and add it to skillet. cook until lightly browned, about 2 minutes per side. transfer to large plate or platter, and cover to keep warm.
  • pour off fat from skillet, and add squash, zucchini, and tomato. season with remaining salt and pepper. cook and stir over medium-high heat until squash is slightly softened, about 3 minutes. reduce heat, and return chicken to skillet. cover partially. cook until squash is soft, and chicken is throughout but still juicy, about 5 minutes longer.
  • transfer chicken to platter, and cover with foil to keep warm. raise heat to high. cook vegetable mixture, stirring often, until almost all of the liquid has evaporated, about 2 minutes. arrange vegetables around chicken, and serve.

Sauteed Zucchini

Ingredients

  • 1 tablespoon butter
  • 1 sweet onion, chopped
  • 1 clove garlic, minced
  • 2 tomatoes, chopped
  • 1/2 cup water, divided
  • 1 cube chicken bouillon
  • 1 large zucchini, thinly sliced
  • ground black pepper to taste

  • melt the butter in a large skillet over medium heat; cook and stir the onion in the melted butter until translucent, about 5 minutes. add the garlic; cook and stir 1 minute more. stir the tomatoes and 1/4 cup water into the mixture; cover. cook until the tomatoes have reduced slightly, stirring occasionally, about 5 minutes.
