Hoisin Chicken Parcels

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sherry wine
  • 1 garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon sesame oil
  • 2 boneless chicken breasts, cut into strips
  • 1 cup snow peas
  • 1 red pepper, sliced
  • 2 green onions, chopped

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 in a bowl, combine hoisin sauce, soy sauce, sherry, garlic, ginger and sesame oil.
  • 3 add chicken, snow peas, red pepper and green onions and toss until coated.
  • 4 divide mixture between two 12 x 14 inch pieces of aluminum foil and fold up packages tightly.
  • 5 cook in oven for 15-20 minutes or until chicken is cooked through and vegetables are tender.

  • 4 chicken legs-thighs, thighs and drumstick separated
  • 1/2 cup hoisin sauce
  • 1 teaspoon five-spice powder

  • 1 put chicken in a foil lined pan.
  • 2 stir hoisin and five-spice powder together.
  • 3 brush liberally over chicken pieces.
  • 4 bake in top 1/3 of oven.
  • 5 bake at 500 degrees f 25 to 30 minutes.

Plantain Gratin - Figue Vert - Green Banana Gratin

Ingredients

  • Servings: 6
  • 3 lbs green plantains, or other green bananas, peeled
  • salt
  • 2 cups chicken stock
  • ground nutmeg
  • 2 tablespoons butter
  • 1 pinch cinnamon
  • 1 small onion, chopped
  • 1 cup grated cheddar cheese
  • 1 cup light cream or 1 cup milk
  • 1/2 cup fresh breadcrumb
  • 2 eggs, beaten

Recipe

  • 1 (grated gruyere cheese can be used instead of cheddar cheese.)
  • 2 place bananas in saucepan and add just enough chicken stock to cover.
  • 3 bring to a boil, reduce heat and simmer until bananas are tender, about 20 to 25 minutes.
  • 4 using a potato masher, mash until smooth (chicken stock will be absorbed).
  • 5 let cool slightly.
  • 6 meanwhile, heat butter in a small frypan and saute onions until tender.

  • 4 tablespoons patak's tikka masala curry paste
  • 1 cup nonfat plain yogurt

Recipe

  • 1 preheat oven to 350*.
  • 2 cut diagonal slices in the chicken pieces and lay the chicken in a baking dish.
  • 3 mix the garlic, curry paste, mango chutney and yoghurt together, and pour over the chicken.
  • 4 lay the tomato slices on top of the chicken.
  • 5 bake uncovered for 30 mins or until the chicken is done.

Lemon Tarragon Chicken

  • 4 boneless skinless chicken breasts (pounded to 1/4 inch thick)
  • salt and pepper
  • 2 cups sliced mushrooms
  • 2 tablespoons butter
  • 1 shallot, minced
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon salt
  • 4 teaspoons lemon juice

Recipe

  • 1 preheat oven to 450. tear off four sheets of aluminum foil (about 12 by 18 inches). place a chicken breast on the lower half of each sheet.
  • 2 season with salt and pepper. top with sliced mushrooms.
  • 3 in a small bowl, combine butter, shallot, tarragon, salt and lemon juice; mix well and divide evenly over chicken and mushrooms.

  • 2 cups yellow onions, chopped
  • 2 teaspoons creole seasoning or 2 teaspoons emeril's original essence

  • 2 lbs okra, trimmed and cut crosswise into 1/2 inch slices
  • 1 bay leaf
  • 1/2 teaspoon fresh thyme, chopped
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon cayenne pepper, to taste (use less (or more)
  • 2 cups corn kernels (cut from 3-4 ears of corn)
  • 1 cup chicken stock
  • 2 cups ripe tomatoes, chopped or 2 large ripe tomatoes

  • 1 heat a large, heavy pot over medium heat. add the bacon and cook it until it is browned up and crispy, approximately 8 minutes. transfer the bacon, with a slotted spoon, to a paper towel lined plate so it can drain.
  • 2 add butter and onions to the pot and cook until soft, approximately 5 minutes. add the creole seasoning and garlic and cook for about 30 seconds. increase the heat to med-high and then add the okra, bay leaf, thyme, black pepper and cayenne. stir to combine. cook, stirring frequently, until the okra is crisp tender, approximately 5 minutes. add the corn and cook, stirring, for about 2 minutes. add the chicken stock and cook for 7-8 minutes, stirring once and a while. add the tomatoes and cook for 2 more minutes. last, add the salt and reserved bacon, stir to combine and serve!

  • 1 soak chicken for at least 1 hour and pat dry.

  • 1 -2 lb fresh asparagus
  • 2 cups ritz cracker crumbs, divided
  • 3 cups shredded cheddar cheese, divided (i like sharp cheddar)
  • 3 -4 hard-boiled eggs, chopped fine
  • 1 (4 ounce) jar pimentos, drained
  • 1/3 cup butter
  • 1/3 cup flour
  • 2 1/2-3 cups milk (or you can use half milk and half chicken broth)

Recipe

  • 1 steam or cook asparagus as desired. i always leave the spears whole, but it may be easier for serving to cut them in half.
  • 2 sprinkle 1 cup ritz cracker crumbs in bottom of prepared 13"x9" casserole.
  • 3 sprinkle 1 1/2 cups cheese over crumbs.
  • 4 layer all asparagus over cheese.
  • 5 sprinkle chopped eggs over asparagus.
  • 6 prepare cream sauce:.
  • 7 blend flour and butter over medium heat until it makes a paste.
  • 8 add liquid, seasoning with salt and pepper to taste.
  • 9 cook, stirring constantly, until bubbly and thick, adding more liquid as needed.

  • 11 on top of sauce, sprinkle pimento, remainder of cheese, topping with remaining ritz cracker crumbs.
  • 12 bake at 350 about 40 minutes until bubbly and cheese is turning light brown.

  • 1/4 cup hoisin sauce
  • 1/4 cup apricot jam
  • 4 boneless skinless chicken breast halves (right from freezer, no need to thaw)
  • 1/4 cup minced fresh cilantro
  • 1/4 cup minced green onion
  • 1 tablespoon lemon, rind of, minced

Recipe

  • 1 mix hoisin sauce and jam.
  • 2 place chicken in a single layer in a 9- by 13-inch pan.
  • 3 bake in a 400 degree f oven for 15 minutes.
  • 4 remove pan from oven; spread hoisin mixture onto chicken.
  • 5 return pan to oven and continue baking until meat is no longer pink in center of thickest part (cut to test), about 10 to 15 more minutes.

  • 3 tablespoons vegetable oil
  • 3 cups shredded raw potatoes
  • 1 cup grated swiss cheese or 1 cup cheddar cheese

  • 3/4 cup diced chicken (cooked) or 3/4 cup ham (cooked) or 3/4 cup sausage (cooked)
  • 1 cup evaporated milk
  • 2 eggs
  • 1/2 teaspoon salt

  • 1 preheat over to 425°f.
  • 2 in 9 inch pie pan mix together vegetable oil and shredded potato.
  • 3 press evenly into pie crust shape.
  • 4 bake 420 for 15 mins until just beginning to brown.
  • 5 remove from oven.
  • 6 filling:.
  • 7 place cheese, diced meat and onion on top of potato crust.
  • 8 beat together milk, eggs and seasonings.
  • 9 pour onto other ingredients.
  • 10 sprinkle with 1 tablespoon parsley flakes.
  • 11 return to oven and bake at 425 for 30 minutes allow to cool for 5 mins before cutting.

Oven Baked Bacon And Banana Chicken

Total Time: 1 hr 5 mins Preparation Time: 25 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 skinless chicken breasts
  • 4 corn on the cob
  • 2 (300 g) cans cannellini or 2 (300 g) butter beans, drained
  • 2 bananas
  • salt and pepper (to season)
  • 250 ml wine
  • 400 ml low-fat creme fraiche
  • 55 g low-fat margarine
  • 8 slices bacon
  • 12 fresh mint leaves, to serve

  • 1 preheat the oven to 220°c/425°f/gas mark 7.
  • 2 cut the corn from the cobs and put the kernels in a roasting tray. and add one drained tin of beans. take the other tin and squash the drained beans, then add them too.
  • 3 slice a pocket in to each of the chicken breasts and squash half a banana into each one. season them with the salt and pepper and place in the roasting tray on top of the beans and corn.
  • 4 add the wine and low fat crème fraiche to the tray over the beans, then lay two slices of bacon on top of each chicken portion. finally, pop little knobs of the spread around the tray in between the bits of chicken.
  • 5 bake for 40 minutes then serve scattered with fresh mint.

  • 6 chicken breasts
  • 6 lemon wedges
  • 1 1/2 cups yogurt
  • 3 garlic cloves, crushed
  • 1 tablespoon grated fresh gingerroot
  • 1 1/2 teaspoons curry powder
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 1/2-1 teaspoon dried red chili

  • 1 prepare marinade: in a large mixing bowl, combine all ingredients.
  • 2 add chicken, mix gently and refrigerate at least 24 hours.
  • 3 place chicken with a light coating of marinade in a shallow roasting pan and bake in 350f oven 30 minutes, basting occasionally with remaining marinade.

  • 1/2 teaspoon salt

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 cut the chicken breasts into approximately 2"x1" pieces and place in 9"x13" baking dish.
  • 3 melt the margarine in a saucepan over low heat.
  • 4 add the garlic, scallions, parsley, dill, oregano, salt and pepper and cook for two minutes.
  • 5 pour the mixture over the chicken pieces.
  • 6 bake for 10 minutes, turn chicken pieces over, and bake for another 10 minutes.

  • 2 lbs spaghetti squash
  • 6 ounces boneless skinless chicken breasts, cut into 1/2-inch cubes
  • 1/2 cup chopped onion
  • 1/2 cup chopped red pepper
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 cup fresh baby spinach
  • 1/2 cup drained artichoke heart
  • 1/3 cup pitted greek olive, chopped
  • 2 tablespoons feta cheese, crumbled

  • 1 cut squash in half lengthwise, discard seeds.
  • 2 place squash cut side down on a microwave-safe plate.
  • 3 microwave uncovered on high for 15-18 minutes or until tender.

Ingredients

  • 2 tablespoons unsalted butter
  • 1/2 cup finely chopped yellow onion
  • 1/4 cup minced garlic
  • 1 cup chicken stock
  • 1 cup wine
  • 1/4 cup heavy cream
  • 1/4 cup fresh lemon juice
  • salt and pepper
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • black pepper, to taste
  • 1 lb boneless skinless chicken breast, cut into 2 inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon finely chopped fresh tarragon

Recipe

  • 1 heat the butter in a medium saucepan. add the onio0n and garlic and cook until the onion is soft. add the chicken stock and wine, raise the heat to medium high and gently boil, uncovered until the liquid is reduced by half, about 15 - 20 minutes.
  • 2 add the cream, lemon juice, salt and pepper. cover and simmer 5 minutes. remove from heat and set aside.
  • 3 in a large bowl combine the flour, salt and pepper. coat the chicken pieces.
  • 4 heat the oil in large skillet over medium high heat. add the chicken and saute until golden brown and cooked through, about 5 -8 minutes, stirring occasionally.

  • 1 combine chicken, 3 cups of water, salt and bring to a boil.
  • 2 melt half the butter in pan. add peeled plantains, cinnamon.mash and mix well for one min on medium heat.

  • 3 lbs chicken legs
  • 5 carrots (2 cut into large chunks, 3 thinly sliced on the diagonal)
  • 2 celery ribs (1 cut into large chunks, 1 thinly sliced on the diagonal)
  • 2 medium onions, coarsely chopped
  • 6 cups water
  • 2 1/4 cups all-purpose flour
  • salt & freshly ground black pepper

Recipe

  • 1 in a large saucepan, combine the chicken legs with the large chunks of carrot and celery, half of the chopped onions and the water. simmer over moderate heat until the chicken legs are cooked through, about 15 minutes. transfer the chicken to a plate. let cool slightly, then remove the meat from the bones and let cool. strain the chicken broth and discard the vegetables.
  • 2 in a medium bowl, combine the flour with 1 cup of the chicken broth, adding a little of the fat from the broth; stir to form a stiff dough. turn the dough out onto a lightly floured board and knead until smooth. wrap the dumpling dough in plastic wrap and let rest at room temperature for 30 minutes.

  • 1 preheat oven to 450 degrees.

Oven Baked Chicken

Greek Tzatziki Chicken Pizza #rsc

Ingredients

  • 1 lb fresh pizza dough
  • 2 cups plain greek yogurt
  • 1 (1 ounce) package hidden valley original ranch dips mix (harvest dill)
  • 1 tablespoon olive oil
  • 1 teaspoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 2 garlic cloves, peeled
  • 1 cup cucumber, peeled, seeded & finely chopped
  • 1 (6 ounce) jar marinated artichoke hearts, drained & chopped
  • 1/4 cup pitted kalamata olive, sliced
  • 3/4 cup sun-dried tomato, chopped
  • 1 1/2 cups chopped cooked chicken breasts (rotisserie chicken works great)
  • 1 1/4 cups crumbled feta cheese
  • nonstick cooking spray, for the pan

  • 1 preheat oven to 425 degrees fahrenheit.
  • 2 to make the tzatziki, combine the greek yogurt, hidden valley® original ranch® harvest dill dips mix, 1 tablespoons olive oil, lemon juice, salt, pepper, and garlic in a food processor.
  • 3 process until thoroughly combined. transfer to a separate dish, cover with plastic wrap and refrigerate for at least 30 minutes.

  • 1/2 cup lemon juice, fresh
  • 1/4 cup olive oil
  • 1 tablespoon peppercorn, crushed
  • 3 large garlic, minced
  • 2 tablespoons honey, warmed
  • 2 tablespoons dijon mustard
  • salt and pepper

Recipe

  • 1 combine the ingredients in a large zip lock bag and add the chicken. marinade for a minimum of 2 hours or up to 1 day.
  • 2 grill or bake the chicken until cooked.
