Hoisin Chicken

Ingredients

- 1/4 cup hoisin sauce
- 1/4 cup apricot jam
- 4 boneless skinless chicken breast halves (right from freezer, no need to thaw)
- 1/4 cup minced fresh cilantro
- 1/4 cup minced green onion
- 1 tablespoon lemon, rind of, minced
Recipe
- 1 mix hoisin sauce and jam.
- 2 place chicken in a single layer in a 9- by 13-inch pan.
- 3 bake in a 400 degree f oven for 15 minutes.
- 4 remove pan from oven; spread hoisin mixture onto chicken.
- 5 return pan to oven and continue baking until meat is no longer pink in center of thickest part (cut to test), about 10 to 15 more minutes.
- 6 baste once with juices.
- 7 meanwhile, mix cilantro, onions and lemon peel.
- 8 transfer chicken breasts to serving platter.
- 9 sprinkle cilantro mixture over and around chicken.
