Hoisin Chicken

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1/4 cup hoisin sauce
  • 1/4 cup apricot jam
  • 4 boneless skinless chicken breast halves (right from freezer, no need to thaw)
  • 1/4 cup minced fresh cilantro
  • 1/4 cup minced green onion
  • 1 tablespoon lemon, rind of, minced

Recipe

  • 1 mix hoisin sauce and jam.
  • 2 place chicken in a single layer in a 9- by 13-inch pan.
  • 3 bake in a 400 degree f oven for 15 minutes.
  • 4 remove pan from oven; spread hoisin mixture onto chicken.
  • 5 return pan to oven and continue baking until meat is no longer pink in center of thickest part (cut to test), about 10 to 15 more minutes.
  • 6 baste once with juices.
  • 7 meanwhile, mix cilantro, onions and lemon peel.
  • 8 transfer chicken breasts to serving platter.
  • 9 sprinkle cilantro mixture over and around chicken.
