Low-fat Scrambled Eggs W/ Avocado

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 8 egg whites
  • 4 egg yolks
  • 1/4 cup chicken broth (or vegetable broth)
  • 1/4 teaspoon salt (plus a pinch to sprinkle on top)
  • 1/4 teaspoon black pepper
  • 1 avocado, diced (optional)

Recipe

  • 1 separate eggs.
  • 2 add egg whites and 4 yolks in bowl.
  • 3 reserve remaining 4 yolks for an alternate use or discard.
  • 4 add the other three ingredients and wisk together thoroughly.
  • 5 cook over medium-high heat stirring constantly until eggs are done.
  • 6 sprinkle with salt and diced avocado.
  • 7 serve with toast.
