Mom's Stuffing

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 12
  • 10 cups bread cubes (i use a combination of and whole wheat bread)
  • 1 big onion, chopped fine
  • 1 cup celery, finely chopped
  • 1/4 cup butter
  • 1 teaspoon ground sage
  • 1 teaspoon salt
  • fresh cracked pepper
  • 1/4 cup chicken stock
  • 1/2 teaspoon poultry seasoning

Recipe

  • 1 melt butter in fry pan over medium heat. add onions and celery, browning for about 10 minutes or until it looks glossy. toss with bread cubes in large bowl together with remaining ingredients. stuff into turkey.
  • 2 this tastes better if you make it the night before and refrigerate it before stuffing the bird.

Gingery Fried Chicken (kara Age)

Ingredients

  • Servings: 4
  • 1 1/2 lbs boneless chicken
  • 1/4 cup soy sauce
  • 1/4 cup sake
  • 1 1/2-2 teaspoons peeled and grated fresh ginger
  • 1 garlic clove
  • 1/3 cup all-purpose flour
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 1/8 teaspoon sansho (japanese fragrant pepper)
  • vegetable oil (for deep frying)
  • 1 lemon, cut into 6 -8 wedges

Recipe

  • 1 cut the chicken into pieces about one inch square. in a shallow bowl, combine the soy sauce and sake, then stir in the grated fresh ginger. lay the clove of garlic on your cutting board and whack it with the flat side of a broad-bladed knife or cleaver to loosen the skin. remove the skin and place the smashed clove in the bottom of the bowl of marinade. add the chicken pieces and let them marinate 20 minutes at room temperature or up to 8 hours covered and refrigerated.
  • 2 combine the flour, cornstarch, salt, and pepper in another shallow bowl or pan. lift the pieces of chicken, one at a time, from the marinade and dredge them in the flour mixture. shake off any excess flour and remove the coated chicken to a plate, letting it stand for 5 minutes. during this time the coating will absorb some of the marinade and the pieces will change from to a beige color.
  • 3 heat the oil to 350 degrees (a pinch of the dredging mixture will sizzle inmmediately on the surface of the oil without burning) and fry the chicken pieces in batches of 4-5 each, for less than a minute. this first frying will seal the outer surfaces with a light-colored crust. drain the chicken well on paper towels and lower the temperature of the oil to about 325 degrees (a pinch of the dredging mixture will sink slightly before sizzling). re-fry the chicken, this time in batches of 6-7 pieces each, for 3-4 minutes. drain the chicken again on paper towels, and serve it hot or at room temperature with lemon wedges.

  • 1 cup breadcrumbs
  • 2 teaspoons basil
  • 1/4 cup parmesan cheese, grated
  • 2 teaspoons oregano
  • 1/4 cup dry wine
  • 1 lb chicken breast

  • 1/2 cup parsley, chopped
  • 1 teaspoon garlic salt

  • 1 preheat oven to 375. in a heavy 2 quart saucepan melt butter.meanwhile on a piece of wax paper combine bread crumb cheese garlic salt basil and oregano pound the chicken and cut into 12 pieces, then dip in melted butter, roll in crumbs and place in sprayed baking dish and put in oven for about 20 minutes. meanwhile add wine parsley and onion to butter mix when chicken is golden brown pour mixture over it and let cook another 3- 5 minutes.

Microwave Steamed New Potatoes & Brussels Sprouts

  • 1/2 lb new potato
  • 1/2 lb brussels sprout
  • 1/2 cup chicken broth or 1/2 cup water
  • 1 dash fresh ground pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh chives

Recipe

  • 1 combine potatoes, brussels sprouts and broth in 2 quart microwave safe casserole. cover tightly with lid or plastic wrap turned back slightly on one side.
  • 2 microwave on high 4 minutes. stir. cover again. microwave on high 3-6 minutes or until vegetables are tender.
  • 3 let them stand, covered, 5 minutes. to serve, sprinkle vegetables with pepper, parsley and chives.

Olive Garden Chicken Formaggio Pizza

  • Servings: 6
  • 4 ounces boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons diced onions
  • 1 cup tomato, diced and drained
  • 1 teaspoon chopped garlic
  • 1/8 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 cup fontinella cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup mushroom, sliced
  • 1 tablespoon parmesan cheese, shredded
  • 1 (12 inch) pre baked prepared pizza crust

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 sauté or bake chicken breast.
  • 3 cool.
  • 4 cut into 1/4-inch wide strips.
  • 5 spray or grease a 12-inch pizza pan.
  • 6 sauté onions and garlic briefly in the olive oil and add them to the tomatoes, salt and basil.
  • 7 spread the tomato mixture over the top of the crust.
  • 8 lay the chicken strips down over the tomatoes.
  • 9 top with fontinella and mozzarella cheeses. add the sliced mushrooms and sprinkle with parmesan cheese.
  • 10 bake at 450 degrees for 8 minutes or until cheese is melted and the crust is piping hot.

  • 4 large boneless skinless chicken breasts, trimmed of fat,washed,patted dry
  • salt
  • fresh ground black pepper
  • paprika
  • 4 cloves garlic, finely minced
  • 2 tablespoons olive oil
  • 2 lemons, juice of
  • 1/4 cup snipped fresh chives

Recipe

  • 1 prepare grill or heat broiler on high.
  • 2 place one large sheet of plastic wrap on flat countertop.
  • 3 take a few drops of cold water and moisten surface of chicken.
  • 4 season chicken breast generously with salt, pepper and paprika.
  • 5 place one chicken breast in center of plastic wrap; cover with a second piece of wrap.
  • 6 flatten meat with flat meat mallet, pounding chicken breast from center outward to an even 1/4-inch thickness.
  • 7 repeat with remaining chicken breasts.
  • 8 combine garlic and olive oil in a small bowl.
  • 9 remove chicken from plastic.
  • 10 rub surface of chicken with garlic oil mixture.
  • 11 combine lemon juice and chives in a separate small bowl; season mixture with salt and pepper, set aside.
  • 12 place chicken on grill or in broiler; cook until well seared, about 3 minutes.
  • 13 turn and cook 2-3 minutes longer, depending on heat of grill.
  • 14 remove chicken; spoon lemon juice and chive mixture over and serve.

Olive Garden Chicken Breast Stuffed With Sun-dried Tomatoes

Ingredients

  • Servings: 4
  • 4 (10 ounce) chicken breasts, with skin
  • 1/4 cup sun-dried tomato
  • 2 tablespoons pine nuts
  • 1 cup frozen chopped spinach
  • 1/2 cup fontina cheese, shredded
  • 2 cups breadcrumbs
  • 1 tablespoon butter, melted
  • 1 tablespoon italian parsley, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

Recipe

  • 1 mix stuffing ingredients together in a bowl.
  • 2 place chicken breast on a cutting board remove the tenderloins and cover with plastic wrap.
  • 3 with a mallet or the palm of your hand slightly flatten the breast out.
  • 4 form the stuffing into a ball and place in center of the chicken.
  • 5 wrap the breast around the stuffing starting with one side roll the breast tucking the opposite side underneath.
  • 6 season the top of the chicken (skin side) with salt and pepper.
  • 7 roast in a 400 degrees oven for 30-40 minutes or until chicken reaches 165 degrees internal temperature.
