- 4 boneless chicken breasts, cut into bite-sized chunks

- 1 marinade:.
- 2 note: you'll need to marinate the chicken for at least 30 minutes. marinating it for longer (up to 24 hours) will increase its flavour.
- 3 mix all the marinade ingredients together and set aside. heat 1 tbsp oil in a heavy-based pan and fry the onion over a medium heat for 5 mins until softened, but not coloured. remove from the heat, cool and combine with the marinade in a large bowl. add the chicken and stir to coat. cover and marinate in the fridge for at least 30 minutes.
- 4 heat the remaining oil in the pan. tip in the chillies and pepper, and fry over a low heat for 1 minute add the chicken pieces along with the marinade, then fry for 10 minutes until the chicken is cooked. top with the spring onions and serve.

- 4 chicken breast halves, cut into strips
- 2 teaspoons cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 large onion, very thinly sliced
- 2 garlic cloves, minced
- 1/2 cup orange juice
- 1/4 cup chicken broth or 1/4 cup water

- 1 season chicken with spice mixture.
- 2 in a large pot heat oil over med-high heat.
- 3 cook chicken, in batches if necessary, until browned, about 10 minutes.

- 3 lbs lb potatoes, cut in half
- 1/2 cup olive oil
- 1/3 cup fresh lemon juice
- 2 tablespoosn fresh minced garlic (or to taste)

- 1 (14 ounce) can chicken broth, undiluited
- 1/3 cup kalamata olive, pitted (or to taste)

- 1 in a large bowl combine the oil with lemon juice, garlic, oregano, salt, black pepper and broth until well combined.
- 2 place the potatoes in a large ziploc bag, then pour the oil mixture over; seal bag and refrigerate for 2-3 hours so the potatoes will absorb all the flavors.
- 3 set oven to 400 degrees f.
- 4 place the potatoes in a buttered casserole dish, then sprinkle with kalamata olives.

- 1 (6 ounce) box chicken stove top stuffing mix
- 1 cup water
- 3/4 cup spaghetti sauce
- 3/4 cup mozzarella cheese

- 1 preheat oven to 375 degrees.
- 2 mix meat, stuffing mix and water.
- 3 spray 12 muffin cup pan with pam.
- 4 form mixture into 12 balls and place in muffin pan.
- 5 make an indentation in center of each ball and fill with spaghetti sauce. bake for 30 minutes uncovered.
- 6 top with mozzarella cheese and bake for 5 more minutes.

- 1/4 tablespoon garlic, minced
- 2 slices bacon, minced
- 1/8 cup chicken stock
- 1/3 cup heavy cream
- 1 ripe plantain, roughly chopped
- 1/4 teaspoon salt
- 1/4 teaspoon fresh coarse ground black pepper
Recipe
- 1 heat a dutch oven over medium-high heat and add the onion, garlic and bacon.
- 2 cook until the bacon is crisp, about 12 to 15 minutes.
- 3 stir in the stock and 1/4 cup of the heavy cream.
- 4 reduce the heat to medium-low and add the plantains.
- 5 simmer the mixture until the plantains are tender, about 5 to 8 minutes.
- 6 add the remaining 1/16 cup of heavy cream and the salt and pepper.
- 7 mash together until well combined.
- 8 transfer to a serving bowl and serve.
- 9 *cook's note: add a little more stock if the mash is too dry.
