Plantain Mash With Bacon For One

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 1
  • 1/4 onion, minced
  • 1/4 tablespoon garlic, minced
  • 2 slices bacon, minced
  • 1/8 cup chicken stock
  • 1/3 cup heavy cream
  • 1 ripe plantain, roughly chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh coarse ground black pepper

Recipe

  • 1 heat a dutch oven over medium-high heat and add the onion, garlic and bacon.
  • 2 cook until the bacon is crisp, about 12 to 15 minutes.
  • 3 stir in the stock and 1/4 cup of the heavy cream.
  • 4 reduce the heat to medium-low and add the plantains.
  • 5 simmer the mixture until the plantains are tender, about 5 to 8 minutes.
  • 6 add the remaining 1/16 cup of heavy cream and the salt and pepper.
  • 7 mash together until well combined.
  • 8 transfer to a serving bowl and serve.
  • 9 *cook's note: add a little more stock if the mash is too dry.
