- 2 tablespoons butter
- 2 tablespoons flour
- 1 (6 ounce) can tomato paste
- 2 -3 teaspoons chili powder
- 2 1/2 teaspoons cumin
- 2 teaspoons garlic powder
- 1 teaspoon cocoa powder (i use hot chocolate mix)
- 1 teaspoon sugar (or to taste)
- 1 dash cayenne
- 1 teaspoon salt (or to taste)
- 1/4 teaspoon pepper
- 2 1/4 cups water
- 2 boneless skinless chicken breasts, cooked and shredded
- 1 (14 1/2 ounce) can diced tomatoes (or mexican-style, or rotel)
- 1 (4 1/2 ounce) can diced green chilies
- 1 (8 3/4 ounce) can sweet corn
- salt and pepper, to taste (i don't use any)
- 8 -10 flour tortillas (depending on how many you can fit in your baking dish)
- 1 cup cheese, shredded (i use sargento's mexican blend)

- 1 preheat oven to 350 degrees.
- 2 assemble the sauce:.
- 3 melt 2 tablespoons of butter and add 2 tablespoons of flour to make a roux.
- 4 add the tomato paste, chili powder, cumin, garlic powder, cocoa powder, sugar, cayenne, water, salt and pepper. taste and adjust. bring to a low boil and reduce to simmer until the sauce thickens. reserve 1/4 cup and set aside.
- 5 make the filling:.
- 6 add shredded chicken, diced tomatoes, green chillis, corn and spices to a large pan. set on stove over medium heat and add the reserved 1/4 cup of sauce.
- 7 stir and cook until warmed through.
- 8 assemble the enchiladas:.
- 9 pour 1/2 cup of the sauce into the bottom of a 9x14 glass casserole dish. place three heaping spoonfuls of the filling into the middle of one tortilla. roll tightly and place in the casserole. repeat with the rest of the tortillas. pour remaining sauce over enchiladas.
- 10 sprinkle cheese on top.
- 11 place uncovered in preheated oven and cook for 25 minutes.

- 1/3 cup grated parmesan cheese

- 1/4 cup dry wine
- 2 tablespoons fresh squeezed lime juice (or lemon)

- 1 mix bread crumbs, parmesan cheese, and seasoning salt in large resealable plastic bag.
- 2 moisten chicken pieces with water, add to bag, one piece at a time.
- 3 close bag, shake gently until chicken is evenly coated.

- 1 pre-heat oven to 350ºf.
- 2 to make the piccatta batter, combine eggs, cheeses, parsley and basil together in a large mixing bowl. set aside.
- 3 to prepare the chicken, pound chicken breasts until ¼รข€? thick.
- 4 dredge chicken in the flour mixture and dip it in the piccata batter; coat evenly on both sides.
- 5 heat olive oil in a large skillet on medium heat. place chicken in the skillet and fry until edges are golden brown on each side.

- 14 to serve, pour ¼ cup of sauce on plate and place chicken on top. serve immediately.

- 1 (8 1/4 ounce) can crushed pineapple in syrup
- 4 boneless skinless chicken breast halves, pounded 1/4 in. thick
- 1/2 cup green pepper, chopped
- 2 tablespoons brown sugar
- 2 tablespoons vinegar
- 1/4 teaspoon ground ginger

- 1 heat oven to 400*.
- 2 mix hot water and butter in bowl. stir in dry stuffing mix, pepper, half the pineapple and syrup.
- 3 spoon stuffing evenly on chicken; roll tightly, secure with toothpicks. place in 9 inch square pan with any remaining stuffing in center.
- 4 mix remaining pineapple and syrup, sugar, vinegar and ginger, spoon over chicken. bake for 30 minutes or until thoroughly cooked.
