Fruit And Almond Couscous

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 2 cups couscous
  • 2 cups boiling chicken stock
  • 40 g butter
  • 1/4 cup dried currant
  • 1/4 cup chopped dried apricot
  • 1/4 cup slivered almonds
  • 1 tablespoon finely chopped coriander

Recipe

  • 1 .place couscous in a saucepan, cover with boiling stock and butter, mixwith a fork to fluff up.
  • 2 add remaining ingredients and mix gently.
