Low-fat Scrambled Eggs W/ Avocado

Ingredients
- Servings: 4
- 8 egg whites
- 4 egg yolks
- 1/4 cup chicken broth (or vegetable broth)
- 1/4 teaspoon salt (plus a pinch to sprinkle on top)
- 1/4 teaspoon black pepper
- 1 avocado, diced (optional)
Recipe
- 1 separate eggs.
- 2 add egg whites and 4 yolks in bowl.
- 3 reserve remaining 4 yolks for an alternate use or discard.
- 4 add the other three ingredients and wisk together thoroughly.
- 5 cook over medium-high heat stirring constantly until eggs are done.
- 6 sprinkle with salt and diced avocado.
- 7 serve with toast.
