Pan-fried Chicken With Tomato And Bocconcini

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 200 g chicken breasts
  • 1/4 brown onion
  • 60 g bocconcini
  • 200 g canned tomatoes
  • 1/4 cup chicken stock
  • 1 garlic clove, crushed
  • 30 ml olive oil, for brushing
  • 3 basil leaves

Recipe

  • 1 heat pan.
  • 2 brush chicken breasts with olive oil.
  • 3 place in pan and lightly golden each side for 2-3 minutes, or until cooked.
  • 4 place tinned tomatoes, garlic, chicken stock and chopped brown onion in pan over chicken.
  • 5 simmer for 4 minutes.
  • 6 add sliced bocconcini and cover pan for 5 mintues, or until cheese is melted.
  • 7 serve using basil leaves for garnish.
