Pan-fried Chicken With Tomato And Bocconcini

Ingredients
- 200 g chicken breasts
- 1/4 brown onion
- 60 g bocconcini
- 200 g canned tomatoes
- 1/4 cup chicken stock
- 1 garlic clove, crushed
- 30 ml olive oil, for brushing
- 3 basil leaves
Recipe
- 1 heat pan.
- 2 brush chicken breasts with olive oil.
- 3 place in pan and lightly golden each side for 2-3 minutes, or until cooked.
- 4 place tinned tomatoes, garlic, chicken stock and chopped brown onion in pan over chicken.
- 5 simmer for 4 minutes.
- 6 add sliced bocconcini and cover pan for 5 mintues, or until cheese is melted.
- 7 serve using basil leaves for garnish.
