Mike Douglas' Chicken Parmigiana

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3 1/2 lbs chicken, cut into pieces
  • 1 cup mushroom, sliced
  • 1 green pepper, core, seed, finely chopped
  • 1/2 cup onion, finely chopped
  • 1 garlic clove, finely minced
  • 2 cups tomatoes, peel, seed, chop
  • 1/2 cup dry vermouth
  • 1/2 cup stuffed olives, sliced
  • 4 tablespoons fresh grated parmesan cheese
  • 4 tablespoons butter or 4 tablespoons olive oil

Recipe

  • 1 preheat the oven to 350°f
  • 2 sprinkle the chicken with salt and pepper and brown on all sides in the butter.
  • 3 sprinkle with the mushrooms and cook for 5 minutes.
  • 4 add the green pepper, onions, garlic, tomatoes, and vermouth.
  • 5 cover tightly and bake for 30 minutes.
  • 6 add the olives and cook for 10 minutes longer.
  • 7 serve with grated cheese.
