Mike Douglas' Chicken Parmigiana

Ingredients

- 3 1/2 lbs chicken, cut into pieces
- 1 cup mushroom, sliced
- 1 green pepper, core, seed, finely chopped
- 1/2 cup onion, finely chopped
- 1 garlic clove, finely minced
- 2 cups tomatoes, peel, seed, chop
- 1/2 cup dry vermouth
- 1/2 cup stuffed olives, sliced
- 4 tablespoons fresh grated parmesan cheese
- 4 tablespoons butter or 4 tablespoons olive oil
Recipe
- 1 preheat the oven to 350°f
- 2 sprinkle the chicken with salt and pepper and brown on all sides in the butter.
- 3 sprinkle with the mushrooms and cook for 5 minutes.
- 4 add the green pepper, onions, garlic, tomatoes, and vermouth.
- 5 cover tightly and bake for 30 minutes.
- 6 add the olives and cook for 10 minutes longer.
- 7 serve with grated cheese.
