Moroccan Chicken

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 1/4 lbs boneless skinless chicken breasts
  • 1 teaspoon olive oil
  • 2 garlic cloves, chopped
  • 1 tablespoon lemon juice
  • 1 (26 ounce) jar spaghetti sauce or 3 cups homemade spaghetti sauce
  • 1 (10 ounce) couscous

Recipe

  • 1 prepare couscous according to package directions.
  • 2 cut chicken breast into bite size pieces.
  • 3 in a large skillet, heat olive oil over medium-high heat and brown chicken.
  • 4 add garlic and cook 30 seconds and then stir in lemon juice.
  • 5 cook over medium heat for 2 minutes, stirring occasionally.
  • 6 bring to a boil, then reduce heat to low and simmer, covered, stirring occasionally, for 10 minutes or until chicken is no longer pink.
  • 7 serve over cooked couscous.
