Hearty Tuna Pie

Ingredients

  • Servings: 4
  • 1/4 cup butter
  • 3/4 cup herb seasoned stuffing mix
  • 2 cups herb seasoned stuffing mix
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup water
  • 1/2 cup milk
  • 2 (8 ounce) cans tuna in water, drained & flaked
  • 2 eggs
  • 1 teaspoon chicken base
  • 1/2 teaspoon dry mustard
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons onions, finely chopped
  • 1/3 cup butter
  • 2 tablespoons cornstarch
  • 1 1/3 cups water
  • 1 teaspoon dill weed
  • 1/2 teaspoon sea salt
  • 2 cups fresh tomatoes, cubed & seeded or 2 cups canned tomatoes, chunks well drained

Recipe

  • 1 heat oven to 350.
  • 2 in a 3 quart saucepan melt 1/4 cup butter. stir in 3/4 cup dry stuffing mix well & press onto bottom & up the sides of a greased 9′ pie pan. set aside.
  • 3 in the same saucepan stir together all filling ingredients; spoon over crust. bake at 350 for for 50-55 minutes or till heated through.
  • 4 let stand out of oven for 10 minutes.
  • 5 meanwhile in 2 quart saucepan, melt 1/3 cup butter. mix together cornstarch and water before adding to the melted butter.
  • 6 stir in remaining sauce ingredients except tomatoes.
  • 7 cook over medium heat, stirring occasionally till mixture comes to a full boil (5-7 minutes). add well drained & seeded tomatoes; simmer for 1 minute. to serve cut pie in wedges an then poor sauce over wedges.
