Orange Chicken Breasts

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 2
  • 2 chicken breasts (bone in)
  • 1 dash paprika
  • 1 dash dried onion
  • 1 dash salt
  • 1 dash pepper
  • 6 small mushrooms (sliced)
  • 1/4 cup orange juice
  • 1/3 cup chicken broth

Recipe

  • 1 place chicken breasts in small roaster with a drizzle of olive oil.
  • 2 sprinkle paprika, onion powder, salt and pepper on top of chicken breasts.
  • 3 slice mushrooms and place around chicken.
  • 4 roast in oven at 375* with lid on for 30 minutes.
  • 5 remove lid and roast for another 15 minutes.
  • 6 remove breasts, place on plate and cover with tin foil.
  • 7 drain grease from roaster but leave in juices.
  • 8 add orange juice and chicken broth, give a stir and bring to a boil over medium heat.
  • 9 boil down, about 5 - 10 minutes until a syrup sauce develops. add 1 tsp butter and stir.
  • 10 serve drizzled over chicken breasts and rice.
