Lime Ginger Chicken With Homemade Salsa

Ingredients

- 1/3 cup fresh lime juice
- 3 garlic cloves, minced
- 1/2 teaspoon ground ginger
- 1/2 teaspoon dried red pepper flakes
- 1/4 teaspoon salt (optional)
- 4 (4 ounce) boneless skinless chicken breast halves
- 2 cups diced fresh plum tomatoes
- 1 cup diced green pepper
- 1/2 cup diced red onion
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 2 garlic cloves, minced
- 1/4 teaspoon salt
Recipe
- 1 in a glass bowl, combine lime juice, 3 cloves minced garlic, ginger, red pepper, and salt.
- 2 cut chicken into 1 inch strips. add the chicken to marinade and toss to coat. cover and refrigerate 2-4 hours.
- 3 meanwhile, combine the salsa ingredients; cover and refrigerate until serving.
- 4 drain chicken and discard marinade.
- 5 cook in a large nonstick skillet until no longer pink, about 10 minutes.
- 6 serve with salsa.
