Orange Chicken

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup fresh orange juice
  • 2 tablespoons dry sherry
  • 2 teaspoons soy sauce
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 4 boneless skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 egg
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 medium orange, sliced

Recipe

  • 1 combine orange juice, sherry, soy sauce, honey, garlic and shallot in a shallow glass dish.
  • 2 add chicken and turn to coat.
  • 3 refrigerate overnight, turning once.
  • 4 place flour in shallow dish.
  • 5 beat egg in another shallow dish.
  • 6 remove chicken, reserving marinade.
  • 7 dip chicken in flour, then in egg, then in flour again.
  • 8 melt butter with oil in large skillet over medium heat.
  • 9 add chicken and cook until browned and tender, 3-5 minutes per side.
  • 10 remove chicken and keep warm.
  • 11 add reserved marinade to skillet, scraping up any browned bits.
  • 12 continue cooking until sauce thickens, about 5 minutes.
  • 13 arrange chicken on platter and pour sauce over.
  • 14 garnish with orange slices.
  • 15 serve with steamed rice and asparagus.
