Lemon Chicken And Couscous Loaf

Ingredients

  • Servings: 6
  • 1 1/2 lbs ground chicken
  • 1 cup cooked couscous (cooked according to package directions)
  • 1 cup firm fresh breadcrumbs
  • 1 cup chopped scallion
  • 1 (9 ounce) package frozen chopped spinach, thawed and squeezed of excess water
  • 1 tablespoon grated lemon peel
  • 1/3 cup chopped fresh mint
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon cayenne
  • 1 egg

Recipe

  • 1 preheat the oven to 350°; in a large bowl, combine all the ingredients, using your hands.
