Make-ahead Chicken Fajitas

Ingredients

- 1 1/2 lbs boneless skinless chicken breasts, cut into strips
- 1/2 cup onion, sliced
- 1/2 cup green bell pepper, sliced
- 1/2 cup red bell pepper, sliced
- 1 (1 ounce) package fajita seasoning mix
- 1 tablespoon finely chopped fresh garlic
- 10 (8 inch) flour tortillas, warmed
- reduced-fat cheddar cheese, shredded
- salsa
- hot pepper sauce (optional)
- guacamole (optional)
Recipe
- 1 stir together all filling ingredients in slow cooker.
- 2 cover; cook on low heat setting for 6-8 hours, or high heat setting for 3-4 hours. drain off liquid.
- 3 cut or shred meat, if desired.
- 4 to serve, place meat mixture on warm tortillas.
- 5 top with desired toppings.
- 6 note: to warm tortillas, heat oven to 275°f.
- 7 wrap tortillas in aluminum foil.
- 8 warm in oven for 15 to 20 minutes.
- 9 serve in foil to keep warm.
