It's Just Peachy Grilled Chicken

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 2 tablespoons peach gelatin (can be sugar free or regular)
  • 1 medium fresh peach, peeled,pitted,finely chopped
  • 4 boneless skinless chicken breast halves

Recipe

  • 1 mix together sugar, cornstarch,& water with a whisk in a small pan.
  • 2 bring to a boil over medium heat; once it comes to a boil, stir and cook 2 minutes then remove from the heat.
  • 3 add gelatin powder and chopped peaches, stirring to coat.
  • 4 measure out 1 cup of the glaze for basting and set aside the rest for drizzling over finished chicken.
  • 5 grill chicken on a lightly oiled grill uncovered, over medium heat, approximately 3 minutes per side.
  • 6 brush with some of the reserved glaze and cook another 6-8 minutes, flipping over every 2 minutes and basting each time you flip, until cooked through.
  • 7 discard any remaining basting glaze and serve cooked chicken with the sauce you set aside earlier for drizzling or dipping.
  • 8 you may also broil this for the same amount of time using your indoor broiler.
