Orange Tarragon Glazed Chicken Breast

Total Time: 2 hrs 30 mins Preparation Time: 2 hrs Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts
  • 3 cups orange juice (your favorite brand)
  • 2 cups grapefruit juice
  • 1 cup extra virgin olive oil
  • 1/3 cup onion
  • 1/4 cup olive oil
  • 1/2 cup orange marmalade
  • 3 tablespoons dried tarragon
  • 2 cups grape juice
  • 1 cup orange juice
  • 2 teaspoons salt

Recipe

  • 1 mix first 4 ingredients and let marinate for 2 hours.
  • 2 saute onions in olive oil until transparent.
  • 3 add tarragon and saute for about 30 seconds.
  • 4 deglaze pan with grape juice.
  • 5 when grape juice is reduced 50% add marmalade, orange juice and salt.
  • 6 cook until slightly thick, removce from heat.
  • 7 remove chicken from marinate, discard marinate.
  • 8 place chicken and lightly greased sheet pan.
  • 9 pour glaze evenly over chicken.
  • 10 cook at 400 degrees for 30 minutes.
  • 11 garnish with orange slices.
