Panfried Chicken Liver In Wine

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 300 g chicken livers
  • 6 slices bacon, diced
  • 1 cup chopped mushroom
  • 1 diced onion
  • 2 garlic cloves, chopped finely
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 handful chopped sage or 1 tablespoon fresh thyme
  • 1/4 cup wine
  • 1/4 cup chicken stock

Recipe

  • 1 soak the chicken livers for 45 minutes then drain and dry.
  • 2 saute the onion in the butter and olive oil til soft.
  • 3 add garlic.
  • 4 add bacon and fry til bacon is cooked.
  • 5 add mushrooms and fry til soft.
  • 6 chop the chicken livers in half.
  • 7 add chicken livers to pan and brown.
  • 8 add wine and bring to boil.
  • 9 reduce to simmer and simmer for five minutes.
  • 10 add chicken stock.
  • 11 cover and cook for approximately ten to fifteen minutes until reduced and chicken livers are cooked through.
  • 12 add fresh herbs and stir through.
  • 13 add salt and pepper to taste.
