Ingredients

- 3 lbs chicken pieces
- 1 tablespoon lemon juice
- 3/4 cup lemon juice
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 3 tablespoons brown sugar
Recipe
- 1 combine chicken and lemon juice.
- 2 marinate at least 6 hours or overnight, turning occasionally.
- 3 remove chicken, discard marinade, reserving 1 tablespoons.
- 4 combine flour, salt and pepper; dredge in flour (this step may be skipped).
- 5 heat oil in large skillet over medium-high heat, fry in several batches.
- 6 transfer to casserole large enough to hold chicken in single layer.
- 7 combine peel and brown sugar in bowl, sprinkle over chicken.
- 8 combine stock and 1 tbsp reserved marinate, pour around chicken.
- 9 bake at 350°f 35-40 minutes.
- 10 good served hot, even better served cold.
