Lemon Chicken Ii

Ingredients

  • Servings: 6
  • 3 lbs chicken pieces
  • 1 tablespoon lemon juice
  • 3/4 cup lemon juice
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 3 tablespoons brown sugar

Recipe

  • 1 combine chicken and lemon juice.
  • 2 marinate at least 6 hours or overnight, turning occasionally.
  • 3 remove chicken, discard marinade, reserving 1 tablespoons.
  • 4 combine flour, salt and pepper; dredge in flour (this step may be skipped).
  • 5 heat oil in large skillet over medium-high heat, fry in several batches.
  • 6 transfer to casserole large enough to hold chicken in single layer.
  • 7 combine peel and brown sugar in bowl, sprinkle over chicken.
  • 8 combine stock and 1 tbsp reserved marinate, pour around chicken.
  • 9 bake at 350°f 35-40 minutes.
  • 10 good served hot, even better served cold.
