Pineapple Tarragon Chicken Breasts

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 (6 ounce) can frozen pineapple concentrate, thawed (you can also use orange juice concentrate)
  • 1/4 cup honey
  • 1 teaspoon tarragon leaf
  • 1/2 teaspoon salt
  • 1 pinch pepper
  • 6 chicken breast halves

Recipe

  • 1 prepare grill placing coals to one side; heat until coals are ash .
  • 2 make aluminum foil drip pan; place opposite coals.
  • 3 in 1 qt saucepan stir together all sauce ingredients.
  • 4 cook over med heat, stirring occasionally, until heated through (3-5 minutes).
  • 5 place chicken breasts on grill over drip pan.
  • 6 baste with sauce.
  • 7 grill, turning and basting occasionally with sauce, for 25-35 min, or until fork tender.
  • 8 to serve, cook remaining sauce over med heat until heated through and serve over chicken.
