Make Ahead Honey Lime Chicken

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 lbs chicken tenders
  • 1/2 tablespoon garlic salt
  • 1 tablespoon peanut oil
  • 1 (20 ounce) can pineapple rings
  • 1/4 cup honey
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch

Recipe

  • 1 sprinkle chicken with garlic salt.
  • 2 in large skillet brown in oil.
  • 3 drain pineapple and save juice.
  • 4 add one fourth of the pineapple juice to skillet.
  • 5 cover and simmer 6 to 8 minutes until chicken is golden.
  • 6 remove chicken.
  • 7 add honey, lime juice, soy sauce, cornstarch and remainder of pineapple juice.
  • 8 bring to boil.
  • 9 cook and stir until thick and clear, about 1 minute.
  • 10 remove from heat and allow to cool.
  • 11 place chicken, pineapple rings and sauce in freezer bag.
  • 12 label and freeze.
  • 13 to serve: thaw in fridge.
  • 14 heat until sauce is hot and bubbly and chicken is heated through.
