One Pan Bloody Mary Chicken And Rice

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 boneless chicken breasts
  • 1 small onion, sliced
  • 2 cups bloody mary mix (i prefer zing zang or major peter's)
  • 1 1/2 cups instant rice
  • 2 tablespoons vegetable oil
  • salt and pepper

Recipe

  • 1 brown chicken in oil in large skillet. remove from pan and set aside.
  • 2 sautee onion until translucent and tender.
  • 3 add bloody mary mix and rice to pan and stir to blend. bring to a boil.
  • 4 return chicken to pan with rice mixture and reduce heat, cover and simmer 5 minutes or until rice is done.
  • 5 excellent when served with steamed broccoli and garlic toast.
  • 6 spicy vegetable juice may be substituted for the bloody mary mix.
