One Pan Bloody Mary Chicken And Rice

Ingredients
- Servings: 4
- 4 boneless chicken breasts
- 1 small onion, sliced
- 2 cups bloody mary mix (i prefer zing zang or major peter's)
- 1 1/2 cups instant rice
- 2 tablespoons vegetable oil
- salt and pepper
Recipe
- 1 brown chicken in oil in large skillet. remove from pan and set aside.
- 2 sautee onion until translucent and tender.
- 3 add bloody mary mix and rice to pan and stir to blend. bring to a boil.
- 4 return chicken to pan with rice mixture and reduce heat, cover and simmer 5 minutes or until rice is done.
- 5 excellent when served with steamed broccoli and garlic toast.
- 6 spicy vegetable juice may be substituted for the bloody mary mix.
