Grilled Chicken With Pinot Plum Sauce

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups chopped ripe plums (about 3 small)
  • 1 cup pinot noir wine or 1 cup dry red wine
  • 2 tablespoons brown sugar
  • 1 tablespoon red wine vinegar
  • 1/8 teaspoon salt
  • 4 (6 ounce) boneless skinless chicken breast halves
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • cooking spray

Recipe

  • 1 to prepare sauce, combine first 4 ingredients in a small saucepan (a); bring to a boil. reduce heat; simmer 25 minutes or until thick, stirring occasionally (b).
  • 2 remove from heat; stir in 1/8 teaspoon salt. pour into a small bowl; cool to room temperature.
  • 3 prepare grill to medium-high heat.
  • 4 to prepare the chicken, sprinkle the chicken with 1/8 teaspoon salt and pepper. place chicken on a grill rack coated with cooking spray. grill 4 minutes on each side or until done. serve chicken with plum sauce.
