Grilled Firecracker Chicken

Ingredients
- Servings: 4
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 (5 lb) roasting chickens, cut into 8 pieces
- 1/3 cup apricot preserves
- 2 tablespoons sweet chili sauce
- 1 tablespoon scallion, finely chopped
- 1 teaspoon ginger, grated
- 1 teaspoon soy sauce
Recipe
- 1 prepare grill for indirect-heat cooking.
- 2 combine salt, garlic powder and pepper; sprinkle over chicken.
- 3 combine the last five ingredients, including the preserves, sweet chili sauce, scallion, ginger and soy sauce; set aside.
- 4 grill chicken, skin-side down, over direct heat until browned, 5 minutes.
- 5 turn; place over indirect heat.
- 6 cover; grill 45 minutes, and baste occasionally with the apricot-chili sauce mixture.
