Lemon And Tarragon Baked Chicken

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1/2 cup unsalted butter
  • 2 cloves garlic
  • 2 tablespoons dijon mustard
  • 1 cup dry breadcrumbs
  • 1 tablespoon grated lemon, rind of
  • 1 teaspoon dried tarragon
  • 6 large chicken breast halves

Recipe

  • 1 line large baking dish with foil.
  • 2 melt butter in heavy skillet over low heat.
  • 3 add garlic and saute 1 minute.
  • 4 remove from heat and stir in mustard.
  • 5 mix breadcrumbs, lemon peel and tarragon on plate.
  • 6 place chicken in butter mixture, turn to coat.
  • 7 place chicken in crumbs, turn to coat completely.
  • 8 arrange chicken, skin side up, in prepared pan.
  • 9 sprinkle with salt and pepper.
  • 10 preheat oven to 375 degrees f.
  • 11 bake chicken until cooked through, basting occasionally with pan dripping, about 1 hour.
