Lemon And Tarragon Baked Chicken

Ingredients

- 1/2 cup unsalted butter
- 2 cloves garlic
- 2 tablespoons dijon mustard
- 1 cup dry breadcrumbs
- 1 tablespoon grated lemon, rind of
- 1 teaspoon dried tarragon
- 6 large chicken breast halves
Recipe
- 1 line large baking dish with foil.
- 2 melt butter in heavy skillet over low heat.
- 3 add garlic and saute 1 minute.
- 4 remove from heat and stir in mustard.
- 5 mix breadcrumbs, lemon peel and tarragon on plate.
- 6 place chicken in butter mixture, turn to coat.
- 7 place chicken in crumbs, turn to coat completely.
- 8 arrange chicken, skin side up, in prepared pan.
- 9 sprinkle with salt and pepper.
- 10 preheat oven to 375 degrees f.
- 11 bake chicken until cooked through, basting occasionally with pan dripping, about 1 hour.
