Lightly Curried Chicken Burgers

Total Time: 21 mins Preparation Time: 5 mins Cook Time: 16 mins

Ingredients

  • Servings: 4
  • 2 tablespoons mango chutney (finely chopped if chunky)
  • 1 tablespoon vegetable oil
  • 2 teaspoons curry powder
  • 1/2 teaspoon salt
  • 1 lb ground chicken (or turkey)
  • 1/4 cup fresh coriander, chopped

Recipe

  • 1 oil grill and preheat bbq to "medium".
  • 2 mix chutney, oil, curry powder and salt in a large bowl. crumble in the chicken.
  • 3 sprinkle with coriander and gently mix together with your hands or a fork.
  • 4 shape into 4 burgers. make a depression in the middle of each burger, with your thumb, so they don't "puff up".
  • 5 place on grill and barbecue with the lid closed until cooked through. this usually takes 5-8 minutes per side.
  • 6 serve on buns or pitas.
  • 7 alternately, pan fry over medium heat in an oil-coated, covered skillet 5-6 minutes per side. they should be brown & firm to the touch. (you may have to lower your heat to med-low, if they brown too quickly).
