Peanut Butter Spicy Chicken Curry

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs boneless skinless chicken breasts
  • 1 cup chicken broth
  • 2 tablespoons curry powder
  • 1/2 tablespoon chili powder (the hot one works best)
  • 1/2 tablespoon garlic powder
  • 1 tablespoon dried onion
  • 1 tablespoon cayenne pepper
  • 1 tablespoon cinnamon
  • 1/2 lemon (squeezed)
  • 2 tablespoons tomato paste
  • 3 tablespoons plain yogurt
  • 1 tablespoon peanut butter (crunchy)
  • red pepper flakes
  • 1 pinch salt
  • 1 pinch pepper

Recipe

  • 1 pour the chicken broth and chicken into the skillet.
  • 2 add all the ingredients except the peanut butter.
  • 3 cover with lid and let cook for 20 mins on low/medium heat.
  • 4 add the peanut butter when there's a couple of minutes left for cooking time, stir in and let the curry finish cooking.
  • 5 if the peanut butter taste is overpowering just put a little more cinnamon inches.
  • 6 add more pepper flakes if you want something spicier.
