Pineapple Chicken W. Black Bean Avocado Salad

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 chicken breast halves
  • 1 red bell pepper, diced
  • 2 scallions, sliced (use green parts too)
  • 4 pineapple rings
  • 1 cup shredded cheddar cheese
  • 4 slices provolone cheese
  • 1 (16 ounce) can black beans, drained and rinsed
  • 2 medium tomatoes, diced
  • 1 medium onion, diced
  • 1 avocado, pitted,and sliced into wedges
  • 1 teaspoon olive oil

Recipe

  • 1 cook the chicken- i prefer to broil.
  • 2 approximately 10 minutes per side.
  • 3 remove chicken and set aside.
  • 4 in small bowl combine black beans, diced tomatoes, onion and avocado slices,add a little olive oil then mix.
  • 5 top chicken breasts with one pineapple ring, then a slice of provolone, then shredded cheddar top with scallions.
  • 6 broil 5 minutes until cheeses are bubbly.
  • 7 serve with the bean and avocado salad.
