Grilled Margarita Chicken Breasts

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 teaspoon lime zest
  • 1/4 cup fresh lime juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons tequila
  • 1 teaspoon kosher salt
  • 1/8 teaspoon cayenne pepper
  • 4 boneless chicken breast halves (with skin)

Recipe

  • 1 in a medium bowl, whisk together lime peel, lime juice, olive oil, tequila, salt and cayenne.
  • 2 place chicken breasts in a large resealable plastic bag.
  • 3 pour marinade into bag; seal and refrigerate 1 hour, turning occasionally.
  • 4 heat a barbecue grill to medium.
  • 5 remove chicken from bag; pour marinade into a small saucepan.
  • 6 bring to a boil and boil for 1 full minute.
  • 7 grill breasts, skin side down, for 8 to 12 minutes.
  • 8 turn and baste with marinade.
