Grilled Margarita Chicken Breasts

- 1 teaspoon lime zest
- 1/4 cup fresh lime juice
- 1/4 cup extra virgin olive oil
- 2 tablespoons tequila
- 1 teaspoon kosher salt
- 1/8 teaspoon cayenne pepper
- 4 boneless chicken breast halves (with skin)
Recipe
- 1 in a medium bowl, whisk together lime peel, lime juice, olive oil, tequila, salt and cayenne.
- 2 place chicken breasts in a large resealable plastic bag.
- 3 pour marinade into bag; seal and refrigerate 1 hour, turning occasionally.
- 4 heat a barbecue grill to medium.
- 5 remove chicken from bag; pour marinade into a small saucepan.
- 6 bring to a boil and boil for 1 full minute.
- 7 grill breasts, skin side down, for 8 to 12 minutes.
- 8 turn and baste with marinade.
- 9 continue to grill and baste until chicken is no longer pink in the center and juices run clear.
