Grilled Peanut Chicken

Total Time: 17 mins Preparation Time: 2 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons reduced-fat peanut butter
  • 1 tablespoon fresh lime juice
  • 2 teaspoons soy sauce
  • 1 garlic clove, chopped
  • 1/2-3/4 teaspoon curry powder
  • 1 dash ground red pepper
  • 4 boneless skinless chicken breast halves

Recipe

  • 1 preheat grill to medium.
  • 2 in a small bowl stir together all the ingredients except the chicken.
  • 3 place the chicken on the grill and brush with half the mixture.
  • 4 grill about 6 minutes; turn and brush with remaining sauce; grill 6-7 minutes more or until chicken is no longer pink (170 degrees f.).
