Grilled Peanut Chicken

Ingredients

- 2 tablespoons reduced-fat peanut butter
- 1 tablespoon fresh lime juice
- 2 teaspoons soy sauce
- 1 garlic clove, chopped
- 1/2-3/4 teaspoon curry powder
- 1 dash ground red pepper
- 4 boneless skinless chicken breast halves
Recipe
- 1 preheat grill to medium.
- 2 in a small bowl stir together all the ingredients except the chicken.
- 3 place the chicken on the grill and brush with half the mixture.
- 4 grill about 6 minutes; turn and brush with remaining sauce; grill 6-7 minutes more or until chicken is no longer pink (170 degrees f.).
