Honey Mustard Chicken Casserole

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 1 lb boneless chicken breast
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 jar chicken tonight light cooking sauce for chicken honey mustard
  • 1 lb red potatoes, boiled and thinly sliced
  • 10 ounces frozen broccoli stems, cooked and drained
  • 1/2 cup shredded low-fat cheddar cheese

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 in a large skillet, lightly brown chicken in oil on both sides.
  • 3 add garlic and saute lightly.
  • 4 add sauce; simmer, covered, 20 minutes over low heat.
  • 5 place cooked potato slices evenly in an 11 x 7-inch baking dish.
  • 6 spoon chicken and sauce over potatoes.
  • 7 evenly layer broccoli over chicken.
  • 8 top with cheddar cheese.
  • 9 bake, covered, 30 minutes or until bubbly.
