lemon barley pilaf

Ingredients

- 1 tablespoon butter
- 1 onion, chopped
- 3/4 cup pearl barley
- 2 cups chicken stock
- 1 bay leaf
- 1 carrot, chopped
- 1/2 red bell pepper, chopped
- 1 teaspoon lemon, zest of
- salt, pepper
Recipe
- 1 melt butter in a saucepan over medium heat.
- 2 add onion, salt, pepper, saute about 5 minutes.
- 3 add barley and stir until well coated.
- 4 add chicken stock and bay leaf, bring to boil, cover, lower heat to simmer.
- 5 cook about 25 minutes until barley is tender.
- 6 add carrot and pepper, cover and cook about 6 minutes more.
- 7 remove from heat, stir, cover and let it stand for 10 minutes.
- 8 stir in lemon zest, salt, pepper to taste.
