lemon barley pilaf

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 1 onion, chopped
  • 3/4 cup pearl barley
  • 2 cups chicken stock
  • 1 bay leaf
  • 1 carrot, chopped
  • 1/2 red bell pepper, chopped
  • 1 teaspoon lemon, zest of
  • salt, pepper

Recipe

  • 1 melt butter in a saucepan over medium heat.
  • 2 add onion, salt, pepper, saute about 5 minutes.
  • 3 add barley and stir until well coated.
  • 4 add chicken stock and bay leaf, bring to boil, cover, lower heat to simmer.
  • 5 cook about 25 minutes until barley is tender.
  • 6 add carrot and pepper, cover and cook about 6 minutes more.
  • 7 remove from heat, stir, cover and let it stand for 10 minutes.
  • 8 stir in lemon zest, salt, pepper to taste.
