Lentils With Spinach And Sausage

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 4 garlic cloves, minced
  • 2 teaspoons ground coriander
  • 1 tablespoon olive oil
  • 1 quart chicken broth
  • 2 bay leaves
  • 1 cup lentils (green or brown)
  • 2 cups potatoes, diced
  • 1/4 lb mild italian sausage
  • 4 cups baby spinach

Recipe

  • 1 heat olive oil in large pot over medium heat. add garlic and coriander and cook until fragrant.
  • 2 add sausage and cook until there is no more pink.
  • 3 add lentils, chicken broth, and bay leaves.
  • 4 cover and bring to a boil, turn down heat and simmer for 10 minutes.
  • 5 add potatoes and cook for 15-20 minutes.
  • 6 when potatoes are soft add spinach and stir until completely wilted.
