Lentils With Spinach And Sausage

Ingredients
- Servings: 6
- 4 garlic cloves, minced
- 2 teaspoons ground coriander
- 1 tablespoon olive oil
- 1 quart chicken broth
- 2 bay leaves
- 1 cup lentils (green or brown)
- 2 cups potatoes, diced
- 1/4 lb mild italian sausage
- 4 cups baby spinach
Recipe
- 1 heat olive oil in large pot over medium heat. add garlic and coriander and cook until fragrant.
- 2 add sausage and cook until there is no more pink.
- 3 add lentils, chicken broth, and bay leaves.
- 4 cover and bring to a boil, turn down heat and simmer for 10 minutes.
- 5 add potatoes and cook for 15-20 minutes.
- 6 when potatoes are soft add spinach and stir until completely wilted.
