Oyster Stew

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 cup chicken broth
  • 2 cups heavy cream
  • 1 tablespoon bourbon
  • 1/2 tablespoon pepper
  • 36 oysters, with their liquor
  • salt
  • 4 teaspoons fresh parsley, chopped

Recipe

  • 1 in a large saucepan bring broth to a boil over high heat.
  • 2 boil until reduced by 1/3, around 5 minutes.
  • 3 lower heat and whisk in the cream, bourbon and pepper.
  • 4 keep at a gentle simmer for 30 minutes.
