Parmesan-yogurt Chicken

Ingredients

- 1 (2 lb) broiler-fryer chickens, skinned and cut up
- 2 tablespoons fresh lemon juice
- salt and pepper
- 1/2 cup low-fat plain yogurt
- 1/4 cup low-fat mayonnaise
- 1/4 cup scallion, siliced
- 2 tablespoons dijon mustard
- 1 tablespoon worcestershire sauce
- 1 teaspoon fresh thyme
- 1/4 teaspoon cayenne pepper
- 1/4 cup parmesan cheese, freshly grated
Recipe
- 1 preheat over to 350 degrees.
- 2 in a large baking dish, arrange chicken in a single layer. drizzle with lemon juice then sprinkle with salt and pepper.
- 3 combine yogurt,mayonnaise, scallions, mustard, worcestershire sauce, thyme and cayenne pepper ina small bowl and mix well.
- 4 spread mixture over chicken and bake for 50 minutes. drain off juices.
- 5 sprinkle chicken with parmesan cheese.
- 6 preheat broiler and broil chicken for a bout 3 minutes or until cheese melts and browns slightly.
