Parmesan-yogurt Chicken

Ingredients

  • Servings: 4
  • 1 (2 lb) broiler-fryer chickens, skinned and cut up
  • 2 tablespoons fresh lemon juice
  • salt and pepper
  • 1/2 cup low-fat plain yogurt
  • 1/4 cup low-fat mayonnaise
  • 1/4 cup scallion, siliced
  • 2 tablespoons dijon mustard
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon fresh thyme
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup parmesan cheese, freshly grated

Recipe

  • 1 preheat over to 350 degrees.
  • 2 in a large baking dish, arrange chicken in a single layer. drizzle with lemon juice then sprinkle with salt and pepper.
  • 3 combine yogurt,mayonnaise, scallions, mustard, worcestershire sauce, thyme and cayenne pepper ina small bowl and mix well.
  • 4 spread mixture over chicken and bake for 50 minutes. drain off juices.
  • 5 sprinkle chicken with parmesan cheese.
  • 6 preheat broiler and broil chicken for a bout 3 minutes or until cheese melts and browns slightly.
