Parmigiano Polenta

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 9 1/2 cups chicken broth
  • 2 cups yellow cornmeal
  • 1 cup parmesan cheese, grated
  • 3 tablespoons butter

Recipe

  • 1 bring chicken stock to boil in heavy large saucepan. reduce heat to medium.
  • 2 gradually whisk in cornmeal.
  • 3 cook until cornmeal is very soft and mixture is thick and creamy, whisking occasionally, about 20 minutes.
  • 4 remove from heat.
  • 5 stir in parmigiano cheese and butter.
  • 6 season polenta to taste with salt and pepper. transfer to bowl and serve. serves 8.
  • 7 that's it!
