Pesto-coated Chicken

Ingredients

• Servings: 3
• 3 -4 boneless skinless chicken breast halves (about 1 pound)
• 1/4 cup plus 1 tablespoon pesto sauce
• 1 1/2 teaspoons sour cream
• 1 1/2 teaspoons mayonnaise
• 1 tablespoon shredded parmesan cheese
• 1 tablespoon pine nuts

Recipe

• 1 preheat oven to 425 degrees f. spray a baking pan with pam.
• 2 cut the breast halves into 1/2-inch cutlets and arrange on prepared pan.
• 3 combine remaining ingredients and brush over chicken.
• 4 bake 8-10 minutes in preheated oven.
