Mom's Chicken Chimichangas

Ingredients

  • 8 ounces cooked chicken, cubed
  • 4 ounces green onions, chopped
  • 8 ounces fresh tomatoes, chopped
  • 1 (3 7/8 ounce) can sliced ripe olives
  • 2 (4 ounce) cans diced green chilies
  • 1/4 cup fresh cilantro, chopped
  • 1 lime
  • 8 ounces cream cheese
  • 8 medium flour tortillas
  • 4 tablespoons olive oil, divided

Recipe

  • 1 combine chicken, green onion, tomatoes, olives, chilies and cilantro. sprinkle with juice from lime.
  • 2 slightly warm the tortillas and then the cream cheese in microwave.
  • 3 place 1 oz "slice" of cream cheese in center of each tortilla, spoon 1/8th of the chicken mixture over the cream cheese into center of tortilla. wrap like a burrito, folding ends shut. optional: use a toothpick to hold tortilla shut.
  • 4 fry over medium high heat in a little oil, until lightly brown and warm in center. continue to add oil to pan as needed.
