Honey-baked Chicken And Sweet Potatoes

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 3 lbs broiler-fryer chickens, quartered
  • salt and pepper
  • 1/4 cup bottled clear french dressing
  • 1/4 cup honey
  • 1/4 teaspoon dried tarragon leaves
  • 1 lb canned sweet potatoes, drained

Recipe

  • 1 sprinkle chicken with salt and pepper.
  • 2 place chicken skin side down in a lightly buttered, shallowed 3 quart rectangular baking dish.
  • 3 mix together honey, french dressing, and tarragon.
  • 4 brush chicken lightly with some of the mixture.
  • 5 bake at 375 degrees for 30 minutes - brushing with mixture occasionally.
  • 6 turn chicken skin side up and brush lightly with honey mixture.
  • 7 bake 10 minutes longer.
  • 8 add sweet potatoes and bake 10-15 minutes longer.
  • 9 brush chicken and potatoes.
