Junior League - Chicken Marbella

Ingredients

- 3 whole chickens, cut into squares
- 1 cup brown sugar
- 1/2 cup olive oil
- 1/2 cup balsamic vinegar
- 1 cup prune, pitted
- 1/2 cup pitted green olives
- 1/2 cup capers
- 2 tablespoons minced garlic
- salt and pepper
- 1 cup dry wine
- 1/2 cup chopped flat-leaf parsley
Recipe
- 1 put chicken in sealable bag. combine sugar, olive oil and vinegar. stir in prunes, basil, olives, caper, garlic, salt, and pepper. pour over chicken. marinate for 8-10 hrs in fridge.
- 2 arrange chicken in single layer with marinade in baking dish. drizzle with wine. bake at 350 for 1 hr, basting regularly. remove the chicken and sauce and plate. sprinkle with parsley.
