Junior League - Chicken Marbella

Total Time: 9 hrs Preparation Time: 8 hrs Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 3 whole chickens, cut into squares
  • 1 cup brown sugar
  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar
  • 1 cup prune, pitted
  • 1/2 cup pitted green olives
  • 1/2 cup capers
  • 2 tablespoons minced garlic
  • salt and pepper
  • 1 cup dry wine
  • 1/2 cup chopped flat-leaf parsley

Recipe

  • 1 put chicken in sealable bag. combine sugar, olive oil and vinegar. stir in prunes, basil, olives, caper, garlic, salt, and pepper. pour over chicken. marinate for 8-10 hrs in fridge.
  • 2 arrange chicken in single layer with marinade in baking dish. drizzle with wine. bake at 350 for 1 hr, basting regularly. remove the chicken and sauce and plate. sprinkle with parsley.
