Mexican Chicken Cutlets

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 (1 lb) bag frozen peppers and onions
  • 1 lb frozen boneless skinless chicken piece, defrosted
  • 1/2 package taco seasoning mix, to taste
  • 1/2 cup reduced-sodium fat-free chicken broth

Recipe

  • 1 combine all ingredients in a large nonstick skilelt and bring to a boil over medium-high heat.
  • 2 lower the heat, cover, and simmer for 15 minutes.
  • 3 add more broth if necessary.
