Grilled Chicken Skewers With Satay Sauce

Ingredients

- 2 chicken breasts (cut into strips)
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 3/4 cup nonfat sour cream
- 2 tablespoons reduced-fat peanut butter
- 1 tablespoon low sodium soy sauce
- 2 teaspoons dark sesame oil
Recipe
- 1 preheat outdoor grill, stovetop grill pan or broiler.
- 2 thread chicken tenders onto metal or wooden skewers (soak wooden skewers in cold water first to prevent charring).
- 3 season with salt and pepper.
- 4 grill or broil until done, about 5-7 minutes, turning frequently.
- 5 whisk together remaining ingredients for satay sauce.
- 6 yields 2 skewers and about 1/4 cup of sauce per serving.
