Grilled Chicken Skewers With Satay Sauce

Total Time: 22 mins Preparation Time: 15 mins Cook Time: 7 mins

Ingredients

  • Servings: 4
  • 2 chicken breasts (cut into strips)
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3/4 cup nonfat sour cream
  • 2 tablespoons reduced-fat peanut butter
  • 1 tablespoon low sodium soy sauce
  • 2 teaspoons dark sesame oil

Recipe

  • 1 preheat outdoor grill, stovetop grill pan or broiler.
  • 2 thread chicken tenders onto metal or wooden skewers (soak wooden skewers in cold water first to prevent charring).
  • 3 season with salt and pepper.
  • 4 grill or broil until done, about 5-7 minutes, turning frequently.
  • 5 whisk together remaining ingredients for satay sauce.
  • 6 yields 2 skewers and about 1/4 cup of sauce per serving.
