Mexican Enchilada Sause

Ingredients

  • 1 1/2 tablespoons olive oil
  • 1/4 cup flour
  • 1 (14 ounce) can chicken broth
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 chipotle chile in adobo, one chile, not all, minced, plus
  • 1 tablespoon adobo sauce, from can
  • 3/4 cup water

Recipe

  • 1 heat oil over medium. add flour and cook, whisking until smooth. add broth, chili powder, cumin, chipotle and adobo sauce, and water. bring to a boil, whisking constantly. reduce heat, and simmer until lightly thickened, about 10 minutes.
