- 25 g butter
- chicken stock
- 500 g peas
- 2 sprigs mint
Recipe
- 1 add the butter to a pan with a drop of water (approx 2-3 tbsp) and throw in a little chicken stock. dissolve the mixture on a high heat to create an emulsion (a liquid dispersed in another liquid). once dissolved, add the peas and reduce for 1-2 minutes. this will help to concentrate the liquid and the flavour.
- 2 just before serving, add the fresh herbs and serve.
